2 c flour
1 c sugar
1 t baking soda
1 t salt
1/2 c wheat germ/oat bran
2 eggs
1/3 c applesauce
1/3 c milk
1 t vanilla
2 L/4 sm bananas
Puree applesauce, egg, milk, vanilla & 1/2 of the bananas until smooth. Add remaining banana. Pour over dry ingredients; mix until moist. Pour into 1 lg or 3 sm bread loaves.
Bake 350 for 40-70 mins.
Cool in pan 5 mins-remove.

<1 c. sugar (can use half brown sugar); applesauce or oil; can use sour milk optional-- 1/2 c. pecans or walnuts; optional--3/4 c. raisins. After first puree, add rest of banana and cream for 15 seconds, (then add nuts and cream about 10 seconds.) Pour into greased loaf pans--makes getting them out easier, especially if there's no oil in your batch. If 3 mini loaves--35-40 mins; if 4 mini loaves--25-30 mins. Left by: MOM (23 Oct 2014)
